Kanda Poha is one of the popular breakfast dish in Maharashtra. It can be eaten as a snack too. Poha (flattened/beaten rice) is gently tossed with onion, green chillies and peanuts. Served mainly with a small wedge of lemon. This easy and tasty recipe can be made in a jiffy. There are many variations in making Kanda Poha across Maharashtra (India).
Prep time : 5 mins, Cooking time : 8 mins
1 cup Poha
1 medium sized onion chopped
3-4 green chillies chopped
1 tbspn peanuts
1 tsp turmeric powder
sugar and salt to taste
½ sliced lemon
few coriander leaves
few curry leaves
Mis en place
1. Wash poha and soak it for 2-3 mins in water. Drain completely in a sieve.
2. Take little (unwashed) poha in a small bowl. Add pinch of turmeric powder and salt. Toss well. Fry in a tsp of oil. Reserve. This will be used as garnish*
Heat oil in a wide bottom pan. Into this, tip in peanuts. When slightly brown, add green chillies, curry leaves and onion. Let the onion sweat for sometime turning, translucent and soft. It will take 4-5 mins.
Add turmeric powder, salt and the flattened rice. Gently combine the mixture and allow it to cook for 2-3 mins on low heat.
Now, add sugar and do a taste test. If required, adjust salt accordingly. Hand-squeeze lemon.
Garnish with fried poha* and coriander leaves. Enjoy!!!
