CHICKEN DRUMSTICKS FRY

Chicken Drumsticks are everyone’s eternal favourite, especially, kids love to gorge on it. It’s simple, easy to prepare and delicious recipe. Chicken legs are marinated overnight or for 5-6 hours along with spices and deep/shallow fried. You can play around with spices of your choice for extra flavour. It is worth the indulgence to delight your taste buds. This crispy chicken fry is being coated with breadcrumbs for additional crunch. They are great appetizers / starters too.

Ingredients

500 gms chicken drumsticks/chicken legs

1 tbsp hung curd

½ tbsp ginger-garlic paste

½ tsp turmeric powder

1½ tsp chilly powder/cayenne pepper (can be reduced as per spice level)

1 tsp coriander powder

½ tsp fennel powder

¼ tsp dry fenugreek leaves powder (optional)

½ tsp rice flour

¼ c breadcrumbs for coating

½ slice lemon

salt to taste

Method

Clean chicken legs well. With the help of a sharp knife, make deep slits on both sides of the chicken legs. This is done so that the marinade can seep through. Pat dry with the help of a kitchen towel and place it in a large bowl.

Into this, add hung curd, ginger-garlic paste, turmeric, chilly powder, coriander powder, fennel powder, fenugreek powder, salt and rice flour. Mix well so that the spices are well coated to the chicken. Keep in on the counter top for 20 mins and then place it in the refrigerator overnight.

Take a kadai/heavy bottom pan. Into this, add enough oil (2 inches); add the marinated chicken after coating it with the breadcrumbs. Fry on medium heat till crispy and golden brown. Remove and place it in a kitchen towel to drain off excess oil.

The cook’s notes

  • while frying it is important to turn the chicken pieces as they brown and do not crowd the pan

  • while making it in huge quantities, do in batches

  • if overnight is not possible, the marinated chicken can be kept for 5-6 hours refrigerated.

  • it should be crispy from outside and moist from inside

  • it is important to maintain the heat temperature while frying

  • can be shallow fried too
