Asparagus with Red Cabbage stir fry is a simple, delicious and quick to prepare dish. It is healthy and packed with nutritional benefits. Asparagus and Red Cabbage are diabetic friendly vegetables as they are non-starchy; provides good source of proteins, minerals vitamins, packed with antioxidants and boosts immune system.
The key to cooking the asparagus is to keep them crispy tender and the red cabbage crunchy in texture; do not over-cook it.
I made this for my hubby dear’s lunch-box; both are not his favourite choice of vegetables and as always, when I asked him – to my utter surprise – he said that he loved it with a twinkle in his eyes. What more can I ask!! Here goes the recipe;
Simple, easy, healthy asparagus with red cabbage stir fried and prepared in a jiffy.

100 gm asparagus tips (chopped)
1 cup red cabbage (chopped)
1/2 tsp mustard seeds
1 tsp pumpkin seeds
1 chilly of your choice (chopped) (increase as per preference)
1 medium sized onion (chopped)
2 garlic cloves (chopped)
few curry leaves
1 1/2 tsp coriander seeds
1/4 tsp cumin seeds
1/4 tsp fennel seeds
5 nos fenugreek seeds
1 1/2 tsp oil
salt to taste
lemon juice (optional) to taste
Clean and chop the vegetables.
Dry roast coriander seeds, cumin seeds, fennel seeds and fenugreek seeds in a small pan for few minutes until fragrant. Cool and crush the spices in a mortar and pestle. Reserve.
Into a pre-heated oil, add mustard seeds and once it splutters, add curry leaves, pumpkin seeds. Stir for few seconds.
Add chilly, garlic, onion and salt; stir. Cook till everything turns soft and translucent.
Stir in the cabbage and allow it to wilt for 5 minutes over medium heat. Add the crushed spices and give a good mix.
Now, add asparagus tips. Stir to combine nicely and cook further for few minutes till the vegetables become crunchy and crispy in texture. Sprinkle little lemon juice if needed.
Switch off heat and serve it with phulkas, rotis or as a side dish with brown rice.
– can use green cabbage instead of red
