Baking chocolate cakes are fun. It can be made for special occasions or after dinner desserts. This Eggless Chocolate Cake is easy, simple and quick to make for any parties or celebrations. It’s fluffy, light and moist cake and can be frosted with your favourite frosting too. When I have to make an eggless cake, I trust only one name ‘Neeta Mehta’. I have tried many of her eggless recipes and it has always been a hit in my home.

100 gm (1 cup) plain flour
1/4 cup cocoa powder
1/2 tsp soda-bi-carb
1 tsp baking powder
1/2 cup condensed milk
4 tbsp powdered sugar
75 gm vegetable oil (odourless)
1/2 cup milk
1tsp vanilla essence
Preheat oven to 150º celsius and grease a small bundt pan with cooking spray.
Sift maida, cocoa powder and baking powder. Keep aside.
Beat sugar and condensed milk till fluffy. Add oil and beat well again.
Add milk and vanilla essence.
Add flour and continue to beat for 3-4 minutes till the mixture is smooth and light.
Pour batter in the prepared pan and bake for 40-45 minutes, or until a skewer inserted into the middle of the cake comes out clean.
Remove cake from the oven; allow it to sit for few minutes before turning them out. Cool completely.

– this cake can be made in a 7″ cake tin too
– oven temperature varies. my cake was baked for 44 mins
