Recipe – QUICK SAUTEED POTATO (potato sabzi)
I love vegetarian food and occasionally love to eat meat. I make simple and tasty vegetarian recipes for my non-vegetarian hubby dear to enjoy carrying it in his lunch box. This recipe is so easy to make and very delicious. Enjoy it with phulkas or rotis. It can be a great side-dish to hot steamed rice too.
Simple, easy and delicious sauteed potato for a quick vegetarian meal.

2 medium sized potatoes
¼ tsp mustard seeds
½ tsp cumin seeds
4-5 nos fenugreek seeds
few curry leaves
1 tsp ginger-garlic-green chilly paste
1 small onion
few curry leaves
½ tsp turmeric powder
1 tsp chilly powder
salt to taste
Peel and clean the potatoes. Cut them in cubes. Keep aside.
Into a pre-heated oil in a pan on medium heat, add mustard seeds; once it splutters, add cumin seeds, fenugreek seeds and curry leaves. Stir for few seconds.
Add ginger-garlic-green chilly paste; saute for a minute. Add onion and saute till it is soft and translucent.
Now, add turmeric powder, salt and the cubed potatoes. Allow it to cook on medium-low heat, stirring in between.
Once it is 70-80% done, add chilly powder and combine everything together; cook till done and the masalas are well coated to it. It will take around 15 minutes.
Uncover and saute for another two minutes. Check the seasonings and switch off heat.
Transfer to a serving bowl, garnish, serve and enjoy with rotis, phulkas or as a side dish to hot steamed rice.
My observations/notes :
- can replace chilly powder with kashmiri chilly powder or paprika
- peeling the potatoes is optional. can directly clean and chop them in cubes
