Recipe – Sindhi Gobi Patata (stir fry cauliflower and potato)

Cauliflower is a super food by itself.  It is an amazing versatile vegetable and can be made in numerous ways.  One cannot help to fall in love with this beautiful vegetable.  Combine it with potato; its simply relishable!  

I wanted to cook a good Sindhi stir fry side-dish with little difference and  I discovered this recipe here.  Serve it with rotis (Indian flatbreads) …. you may lose count of eating the number of rotis… excellent!  Hubby dear who does not like cauliflower loved this dish with rotis; it has become a regular and favourite dish.

Stir fried cauliflower and potato in Sindhi style green masala.

Ingredients

1 whole cauliflower (cleaned/rinsed)
2 big potatoes (cleaned/quartered)
2 tomatoes (chopped)
3 green chillies (chopped)

4 big garlic cloves
1″ ginger
a handful of coriander leaves

1/4 tsp turmeric powder
2 tsp coriander powder
1/4 tsp garam-masala

salt to taste
oil

Method

Separate cauliflower florets carefully and rinse it  in water well.  Boil the cleaned cauliflower in salted water for 2 minutes.  Drain and pat dry; fry till golden brown.  Reserve.

Now, peel and cut potatoes in quarters, add salt to it and fry till done.

In a mortar and pestle, pound ginger, garlic and coriander leaves together.  Keep aside.    Put some oil in a pan and when it heats up, add this mixture, saute for few minutes till raw smell leaves.

Add chopped tomatoes and fry till they are soft and cooked.

Add green chillies, fried cauliflower and fried potatoes, turmeric powder, coriander powder and garam masala powder.  Combine everything together.

Sprinkle water if needed.  Cover the pan and allow the flavours to blend with each other for few more minutes.  Do a taste test, and add salt if required.

Garnish and serve.
