Recipe – AVOCADO RICE

Avocado Rice are fun to make during weekends. I used leftover brown rice and kept it very easy and simple. You can add different variations like carrots or red capsicum to make it look colourful. Also add a tablespoon of any chopped leafy vegetable of your choice to this recipe and make it healthy. Nuts like peanuts, cashew-nuts or almonds can be replaced with raisins. Tear some basil, cilantro and mint leaves into the dish to make it crunchy. If adding sesame seeds, toast it gently on low heat and add it towards the end. It makes a perfect bachelor dinner during weekends.

Brown rice flavoured with creamy and healthy avocado, sweet raisins and zesty hand-squeezed lemon, the best way to use the leftovers for a satisfying meal.

Ingredients

1 cup day old cooked brown rice

1 avocado (peeled, pitted and chopped roughly)

¼ tsp cumin seeds

5-6 raisins

2 green chillies or 1 red chilly pepper

¼ cup sliced shallots

2-3 garlic chopped

½ tsp turmeric

4 nos cherry tomatoes

a handful of boiled green peas

½ slice lemon juice

salt to taste

Method

Into a pre-heated oil, in a wok, on medium heat add cumin seeds, raisins; saute until they crackle. Now, add green chillies, garlic and shallots. Saute for 5 minutes till the shallots are soft and translucent.

Add turmeric, cherry tomatoes and boiled green peas; mix well and saute for 2 minutes.

Rinse your hands to separate the cooked rice making sure there are no lumps; add it and combine everything together. Cook further on low heat for about 4 minutes, tossing occasionally.

Last but not the least, add avocado. Give a quick mix. Add salt if required. Transfer it into a serving bowl and enjoy!!!

My observations/notes:

  • can skip cherry tomatoes and use 1 tomato. do not overcook it

  • corn can be used instead of green peas
  • I used half slice of avocado

  • can use leftover white rice too instead of brown

  • can skip chillies and use crushed pepper instead

  • this recipe is best with day old rice. However, it is purely personal choice.
