Potatoes can be combined with medley of vegetables. It lifts up the dish and makes it tasty. Spinach is packed with vitamins, minerals and dietary fiber – reminds us of our favourite toon character ‘Popeye’. Combine these two vegetables; you get a unique, flavoursome and healthy dish. It can be cooked in minutes. This simple, tasty, home-style preparation can be enjoyed with steamed rice or rotis and any spicy curry.
Fresh spinach and potato sauteed along with onion and an array of spices making it a satisfying vegetarian side dish at any time.

2 cups spinach/palak (washed/drained/randomly chopped)
2 medium sized potato (washed/cut/quartered)
1 medium sized onion chopped
2 green chillies chopped
1tsp ginger-garlic paste
1/4 tsp cumin seeds
pinch of asafetida (hing)
1/2 tsp turmeric/haldi
1 tsp chilly powder / cayenne pepper
1 tsp coriander powder
1/2 tsp garam masala powder
salt to taste
1/2 slice lemon hand-squeezed
Take a wok/kadai, keeping the heat to medium, tip in oil. When the oil heats up, add asafetida/hing, cumin seeds. Saute for few seconds.
Add the potatoes, salt and turmeric. Cover and cook, stirring in between. Once the potatoes are al dente add the spinach. Give a mix and and cook till it wilts just right, without lid on medium heat.
Now, add the remaining spice powders except the garam masala. Combine everything nicely. Simmer and cook further till done.
Hand-sqeeze lemon; add garam masala; stir it around. Do a taste-test and adjust salt accordingly.
Switch off heat. Garnish and serve with steamed rice and some spicy curry.
My observations / notes:
– can 1 add tomato instead of lemon
– do not over cook spinach
