Recipes – SWEET POTATO PARATHA

Sweet potatoes are high in Vitamin A, C, D, iron, magnesium and has many more nutritional benefits. There are two types of sweet potato, one with bright orange flesh and the other with pale cream. They can be prepared in many ways; mashed, steamed, roasted, grilled or baked. They  very versatile and can also be added in soups and stews too.

Simple, soft, delicious, paratha with the vibrant colour of sweet potato enjoyed plain or relished with any spicy curry.

Ingredients

1 medium size sweet potato

1 cup unbleached flour (maida)

½ tsp ground cumin seeds

Oil / ghee

Salt and chilli powder to taste

Additional flour required for dusting

Method

Clean and pressure cook sweet potato with enough water for 10mins. Check with fork whether it is done. Remove, peel off the skin and mash the sweet potato, adding ground cumin seeds and salt.

Take a bowl, add flour. Sprinkle little chilli powder and salt. Combine the mashed potato with the flour. Knead well. In case it gets sticky, dust your hands with little flour and continue to knead till it forms a soft pliable dough (keep it covered with a clean kitchen towel so that they do not run dry). Let it stand on the counter for 15 mins. After allowing the dough to rest, divide it into equal parts.

Take one portion, roll it in between your palms and flatten it lightly, dip it in flour. Using a rolling pin, roll into thin / thick parathas, giving a nice round shape.

Meanwhile, heat a pan on medium heat. When it is hot, place the paratha on the pan and cook for few seconds, flip, lightly press the paratha to get cooked. When you see bubbles on the paratha, flip and cook on the other side until brown spots appear on both the sides.

Repeat process with other portions. Serve hot.

The cook’s notes
Do not add water as the sweet potato have enough moisture to make the dough.
Can also use white sweet potato for this recipe. It may require little water while kneading the dough.
Wheat flour can be used instead of maida or combination of both.
This dough is a sticky dough. Dusting the hands will enable to handle the dough easily
