There are many variations to make your favourite Pancakes (which can be flat or thick); made sweet or savoury. Drizzled with honey and topped with a dollop of butter like the old fashioned way or team them with chocolate sauce, ice-cream, syrups, lemon zest, whipped cream or fruits like bananas or berries to make a delicious dessert.  Home-made pancakes are simple, easy and can be made in a jiffy. It’s every Kid’s Dream – pancake topped with lots of chocolates chips/chunks and sprinklers.

Healthy Recipes

Prep time : 5mins, Cooking time: 10mins, Makes: 7-8 pancakes

1 cup whole wheat flour
1 cup milk (lukewarm)
1 large egg (room temperature)
1½ tsp baking powder
1½ tbsp sugar
¼ tsp vanilla extract
¼ tsp salt
3 tbsp coconut oil
Pinch of ground cinnamon
Favourite chocolate chips/ chocolate bars


Separate egg white with yolk. Keep aside.

In a bowl, add yolk and sugar. Whisk, using a fork, together till sugar dissolves; add vanilla, ground cinnamon, coconut oil and milk.

Sieve wheat flour, baking powder and salt in another bowl. Make a well in the centre, gradually, add small amount of the milk-egg mixture, whisking regularly. Do not over mix which leads to tough pancakes. There should not be any lumps.

Another bowl, beat the egg white till soft peaks. Add into it the wheat flour batter. Fold gently. Allow it to rest for 5 mins.

Take a non stick pan, keep the heat over medium. Check the temperature by dropping little water and if it skitter across the surface; it’s ready. Using a ¼ cup measure, scoop the batter onto the pan. Do not spread batter. Immediately, add chocolate chips/chunks. Cook for 1 1/2 minutes. When you see bubbles on the top, flip it and cook on the other side for a mintue or so, until golden brown.

Repeat process with the remaining batter. Drizzle with your favourite syrup.

My observations/notes :

Melt coconut oil, if solidified.
Beating the egg whites separately makes the pancakes light and fluffy
Can skip coconut oil and use butter which has to be melted and cooled.
The temperature of heat should be low to medium.
Can drop egg and increase the content of baking powder for eggless pancake
Can use almond milk or soya milk.
Can also use almond extract instead of vanilla
