Recipes – GUACAMOLE SANDWICH TOAST

Guacamole is an avocado based dip with onion, tomatoes and other spices. Avocados are high in healthy fats and are a good source of fiber, minerals and vitamins. There are many kinds of avocados and shape – from pear shaped to round shaped and colours from green to black can vary between them. They have a creamy buttery texture and are delicious. It can be used on toast instead of butter/mayonnaise or you can simply scoop them with a spoon, season with salt/pepper. It is also used in dips, salads and smoothies. It goes well when blended with other ingredients and make a delicious healthy food.

Prep time : 5 mins, Serves : 2-3 nos

Ingredients

Bread of your choice

2 ripe Avocados (pitted/peeled)
1 onion chopped
1 green chilli finely chopped
1 small tomato
½ tbspn finely fresh chopped coriander leaves
1 hard-boiled egg
1 tbspn grated carrot
½ tspn cumin powder
Pinch of mustard powder or ½ tsp Dijon mustard
Crushed black pepper to taste
Few drops of lemon juice
Salt to taste
Bread of your choice

Method

Chop onion, tomato, green chilli and coriander leaves. Tip them in a bowl along with the grated carrot. Keep aside.

Now, using a small sharp knife run the blade all the way around the avocado from top to bottom. Gently twist the two halves in opposite directions to separate them. Remove pit. Scoop the pulp with a spoon and mash them with a fork (keep little bits of chunks). Tip them into the onion mixture.

Add chopped/grated boiled egg, crushed pepper, cumin powder, mustard powder, lemon juice and salt. Do a taste test and adjust spices accordingly. Stir well till everything is combined.

Take 2 slices of your favourite bread. Spread a tablespoon of the avocado mixture on one side of the bread, close seal with the another. Press lightly. Heat a non-stick pan on medium heat; place the sandwich and toast the sandwich with butter till golden brown. Enjoy!

My observations/notes :

You can skip egg and add chicken instead. Potato or cabbage can be used instead of carrot. Few drops of hot and sweet chilli sauce can also be added. While giving to the kids, top the sandwich with their favourite cheese after the filling is added.
