Recipes – HOMEMADE MUESLI

I am rumbly in my tummy…..thought to make a quick fix breakfast …………Tasty and simple if you think about it…. It is easy to make your own, using favourite fruits and nuts. It can be eaten plain or dribbled in milk with a blob of yogurt, modicum of honey, dollop of ice-cream, a spoonful of jam or condensed milk. To balance the overwhelming sweetness of condensed milk, you can flavour it up with lemon juice. It is so versatile that you can have it with rice flakes, wheat flakes or corn flakes too. You can mix it with pancakes, cookies or muffins. Go Crazy! Double the quantity for the whole family to enjoy it. Store it in an airtight container and it lasts for a month.

Guessed it right! Home-made muesli? Pronounced “muse-lee”. Originated from Switzerland and in Swiss which means ‘mush’. Can be eaten cold or served warm with fruits and nuts of your choice. Soaking muesli helps in easier digestion for some people with digestive problems.

Healthy Recipes

Prep time : 10 mins, Cooking time : 5 mins

Ingredients

3c oats (rolled or quick cooking)
3 tablespoons seeds (flaxseeds, sunflower, sesame, or pumpkin)
1/4c mixed dried fruits (dates, raisins, cranberries, apricots, figs, dried coconut shavings)
1/4c mixed nuts (peacans, walnuts, cashews, almonds, peanuts, hazelnuts, pinenuts)
Fruits of your choice like apples, bananas, cherries, berries

Method

Take a sauce pan and dry roast oats in a low flame for few minutes. Mix in seeds, dry fruits and nuts. Store it in an airtight jar in a dry place. Use as and when required with your favourite fruits.
While serving, put little mixture in a bowl. Add into it some warm milk with a dash of cinnamon and a pinch of salt. Heat slowly on a low flame for few minutes. Switch off stove and add syrup of your choice. Combine well. Let it stand for about 5 minutes. Chunks of chocolate, chocolate chips, dried banana chips can also be added.
When serving cold, put little mixture in a bowl, adding apple juice/orange juice. Leave it soaking in the refrigerator overnight. Next morning, add toppings of your choice. A tablespoon of brown sugar can also be added; however, it is pure optional.
Today I had my muesli with some mashed sweet potato. Voila!
