Recipes – CHICKEN WITH BELL PEPPERS

I made this easy and delicious lip-smacking dish yesterday with some bell peppers which I had it in my refrigerator. It goes very well with roti, naan, paratha or rice. To make this dish more colourful, you can add yellow or red bell peppers too. Don’t skip the bell peppers, as it gives a sweet and unique flavour to the dish. Garnish it with herbs of your choice.

Ingredients
500 gms chicken (with skin/without skin) washed and cut into medium size pieces
2 tbspn vegetable oil (decrease/increase as reqd)
½ of two bell peppers (green and red) sliced
2 onions chopped
2 tomatoes chopped
½ teaspoon store bought/homemade garam masala
1 tbspn tomato sauce
Salt to taste

To marinade
1 tspn soya sauce
1tspn vinegar
1 tspn garlic ginger paste
1 tspn red chill powder (less/more as per your requirement)
½ tspn paprika
1 tspn coriander powder
¼ tspn turmeric
½ tspn ground cumin powder
½ tspn pepper powder
Salt
Make a paste of the above “To Marinade” ing.. The first half, add it to the chicken and the other half, keep it aside. Keep the marinated chicken for 1 ½ hours. First 20 mins, let it stay on the work-top and the next remaining minutes , keep it inside the fridge.
In a food processor, process onions & tomatoes separately. Reserve. Take a heavy bottom pan, add 1 ½ tbspn oil and tip in onions and saute till translucent. Into this, add the tomatoes. Saute till tomatoes turn soft and mushy. Now add in the other half of the marinade masala. Stir nicely for few minutes till oil emanates at the top. Add sliced capsicum and saute well till it is light and crunchy. Turn off heat and keep aside.*
In the same pan, add the remaining oil and tip in the marinated chicken. Cook on high flame for 5 mins, stirring occasionally. Reduce heat and add ½ cup water and let the chicken cook for another 10 mins, till tender. Now, add the reserved masala paste*, tomato sauce and the garam masala powder. Combine everything well. Adjust salt accordingly. Switch off the flame. Garnish with your favourite herbs.
